BAKER / BAKERY ASSISTANT

Starting Pay: $19.00–$22.00/hour, depending on experience

Fresh bread is one of the most important parts of Bánh Mì Ba-Ye. Our bread is prepared and baked in-house daily, so consistency, timing, attention to detail, accurate recordkeeping, cleanliness, and teamwork are especially important for this position.

The Baker / Bakery Assistant position is a cross-trained position. Because bread production may include downtime between different production stages, Baker / Bakery Assistants will also be trained in Food Preparation and are expected to assist with food-prep duties when the baking schedule allows.

Responsibilities

  • Prepare fresh bánh mì dough according to Ba-Ye recipes and production procedures.
  • Accurately weigh and measure flour, water, yeast, salt, and other ingredients.
  • Follow established mixing times, dough temperatures, resting times, proofing conditions, and baking procedures.
  • Operate commercial mixers, dough dividers/rounders, molders, proofers, racks, and ovens after proper training.
  • Divide, round, shape, proof, score, steam, and bake bánh mì.
  • Monitor dough development and production conditions throughout the entire process.
  • Monitor proofing time, temperature, humidity, and dough condition.
  • Monitor oven temperature, steam, baking time, and finished bread quality.

Production Monitoring & Batch Records

  • Complete a Batch Record for every batch produced.
  • Monitor and accurately record all required production parameters throughout the bread-making process.
  • Follow the Batch Record and ensure all required parameters and fields are completely and accurately filled out for every batch.
  • Required information may include ingredient weights, mixing times, dough temperature, resting time, proofing time, proofer temperature and humidity, oven temperature, steam, baking time, production quantity, and other required process parameters.
  • Record production information at the time each step is performed, rather than completing records later from memory.
  • Verify that required parameters are within Ba-Ye’s established specifications.
  • Immediately report any parameter outside the required range, unusual dough condition, equipment problem, or other production issue to management.
  • Do not independently change recipes, ingredient quantities, processing parameters, or established procedures without authorization.
  • Document approved adjustments or deviations as required.
  • Maintain Batch Records that are complete, accurate, legible, and truthful.
  • Never falsify, estimate, backdate, or intentionally enter inaccurate production information.

Quality & Daily Production

  • Maintain consistent bread weight, size, shape, color, texture, and overall quality.
  • Follow the daily production schedule to ensure enough fresh bread is available for restaurant operations.
  • Organize baked bread and bakery production areas.
  • Prepare ingredients and equipment for the next production cycle.
  • Clean and sanitize mixers, work tables, trays, racks, proofers, ovens, and bakery areas.
  • Sweep and mop bakery work areas.
  • Follow all food-safety, sanitation, and equipment-safety procedures.
  • Report equipment problems or unusual production results to management.

Cross-Training & Food Preparation Support

Bread production naturally includes waiting periods between certain stages, such as dough resting, proofing, and preparation for the next batch. During these periods, Baker / Bakery Assistants are expected to use available work time productively by assisting the Food Preparation team, while continuing to properly monitor the bread-production process.

  • All Baker / Bakery Assistants will also be trained in Food Preparation / Bánh Mì Assembly duties.
  • Assist with food preparation whenever the baking production schedule allows.
  • Food-prep duties may include washing and cutting vegetables, preparing pickled vegetables, sauces and toppings, portioning ingredients, organizing ingredients, preparing meats or other menu ingredients after proper training, and assisting with bánh mì assembly.
  • Help restock and organize food-preparation and assembly stations.
  • Assist with cleaning, dishes, sanitation, and other kitchen responsibilities as needed.
  • Follow all Ba-Ye recipes, portion standards, food-preparation procedures, and food-safety requirements while working at the food-prep station.
  • Baking responsibilities remain the first priority. Employees must continue monitoring dough, proofing, timing, temperatures, humidity, ovens, and other required production parameters while assisting with food prep.
  • Employees are responsible for keeping track of production timing and returning to the baking process at the appropriate time.
  • Food-prep responsibilities must never cause required baking checks, production steps, or Batch Record entries to be missed or delayed.
  • Be willing to assist other team members and stations when bakery production is caught up and operational needs require additional support.

The purpose of cross-training is to help employees use their work time efficiently, support the team, and develop skills in multiple areas of Ba-Ye’s operation.

Employees who demonstrate proficiency in both Baking and Food Preparation, maintain strong performance, and take on additional responsibilities may be considered for future pay increases, Lead positions, or other advancement opportunities.

Physical Requirements

  • Ability to stand or walk for extended periods during shifts.
  • Ability to regularly lift, carry, and move objects weighing up to 25 pounds.
  • Ability to perform repetitive bakery and food-preparation tasks throughout the shift.
